It is the juice of the olive and for that reason it is so unique that it can be called oil. There are few oils that come from a fruit. Nutritionally, olive oil is the most perfect of all the fats. In its composition, the oleic acid participates mainly as a monounsaturate which plays a fundamental role in the lipidic metabolism. The lipidic metabolism helps the cholesterol formation that drags the deposits of our arteries that are eliminated by the liver. It also has the right proportion of polyunsaturated and essential linoleic. In addition, it aids the intestinal tract which has positive effects on the gallbladder. The olive oil protects the cellular structures in front of the oxidation which is the reason why when consumed it diminishes the incidence of diverse types of cancer. Consequently oil olive also delays to the cellular aging and the neuronal degenerative diseases. Gastronomically it is the best ingredient that gives character to any salad, soup, vegetable stew, cooked or grilled meat and fish. The different varieties of oil offer possibilities to appreciate the very diverse aromatic shades which contribute to any Spanish chefs’ kitchen.
